I love Kraft instant tapioca!! I also do the fluffy recipe, BUT I add one extra egg white and mix (with the sugar) using a hand mixer until the egg whites are STIFF. I then fold the egg whites into the tapioca mixture before adding the vanilla. You'll have little pillows of meringue throughout the pudding that I think is delightful.

That’s not nice. Minute tapioca is something moms have been making for decades and it’s fine. It’s not the same as making from tapioca pearls, but it’s ok. Pineapple pizza is a matter of preference. There are no rules, and there’s hundreds of types of flatbreads the world over, with hundreds of types of toppings. Different cultures have different preferences. And even in Italy the injunctions against pineapple is challenged by chefs. This lady is doing something she likes. Her technique would profit from some helpful direction as some commenters have provided, but there’s no crime in her demonstration.

You should try to beat egg whites until very foamy then slowly add sugar and continue beating until very stiff - try to aim the finish time of the eggs to finish time of cooking the pudding mixture - they will mix better and you won't lose as much of the egg white voluum.

Yes just about an inch to two inches of water it would just be like a regular pressure cooker does.
