Just beyond absolute belief and just completely baffles why people do it. You obviously have a good photographer, a pleasant and clean kitchen to work in, you know your knowledge, as an ex teacher, trainer and presenter you have a clear voice and good dictation and I even at 71 have good hearing. To day my wife bought me some mussels for me to cook while she is away, so flicking through the KZbins yours looked very good, especially the tip about the oats BUT I CAN'T UNDERSTAND WHAT YOU ARE SAYING AS YOU HAVE QUITE A LOUD, VERY ANNOYING and DISTRACTING 'BANJO' MUSIC COMPETING with what you are saying. WHY?

Too much sugar. Sorry but that's not healthy at all. You can avoid it and then pour them with honey, which would be healthier (or avoid the sweetness at all).

Fresh standing water doesn't have enough oxygen. Soaking is NOT a good idea.rinse them in running water, if you must, and move on.

Just watched this presentation as I haven't cooked Mussels for 12 years! Usually boil up in tommoto, fresh sliced, onion, garlic. Then add Mussels. I now prepare as per this very good, instructional and classy demonstration!

The poaching pod was the best and is the method I always use. I even have exactly the same yellow one. Tip: if the white is still a bit "snotty", blast it on the plate with a cook's blowtorch for 5 seconds.

I'm no vegan and I know this sounds stupid but I can't bring myself to steam or boil a critter alive, even if they are brainless shellfish. I'd rather buy my critters already dead and either in a can, under saran wrap or frozen.
