It's ridiculous that we don't get dairy whipping cream in India and most bakers and bakeries have to use the vegetable oil loaded non-dairy whipping creams. It's been 6 years since you posted this video. Have things changed now? Can we source dairy whipping creams now?

I was also looking for a better diary based and i ended up here. Amul started 'whipping cream' with 30% fat which works decent for icecream . Not the freshcream . You do get soft peaks but not like the non diary ones. You can get it from bigbasket or very few supermarket (not in freezer/cold area). It will be in liquid consistency and you need to whip by getting that to 0degree . used 3-4 litres till now to make icecream. wouldn't suggest for cakes as you need 35+ percentage for holding it strong for bit longer

Hi! We just moved from a dry place to an extremely humid area. And after experimenting i find that fondant details that i’ve dried out and placed on the cake sweats and softens once you take them out the fridge. So when working with cake with fondant details, when would be the best time to apply them on the cake? Do you do it the day it gets picked up? If so, is it ok to place in the fridge for a few hrs? Im so used to placing fondant cakes in the fridge overnight without any issues with them softening up once they get to room temp.
