I like Gail’s bakeries in London, I also get these eggs when I go to my local Gladwells in Camberwell. I think it’s important we support the farmers who are trying to improve welfare, feeding and the quality of the end product. The eggs have a nice orange yoke and taste great.

Interesting. My grandfather João (John) Leister was a tall slim man born in Brazil early 1900 (grandson of a German immigrant) He spent 50 years involved with farming over there

In the Gails book, the salt is mixed with the flour and the water added before mixing slowly for 10 minutes. Only then is the sourdough starter added. What difference does this change of order make?

Holding the salt allows the gluten to develop, salt is an inhibiter. So hold the salt when you're mixing you dough, until your dough is worked and the gluten has been developed .
