What about the lower part of the oven ? Can you bake flat bread ?

Yes, you can bake anything in the oven. Flatbreads direct over the flame in lower part of the oven or further up in the oven using a baking stone. The temperature is pretty even throughout the oven.

It's insulated. The cloth is a chef thing. You can see he uses it when he is in contact with the shelves.

The cloth is for pulling out the tray. Handle doen't heat up.

You always see the Josper ovens at those amazing little local restaurants in Barcelona - the meat is always so juicy, and the fish and potatoes and all the little smoky gratins they pull out of there, nonstop. You can buy a home version of these but unless you are building a mansion from scratch, it’s gonna be a challenge. Unless some brilliant British guys design a practical outdoor version, so that a suburbanite has a viable path to having a professional charcoal oven to play with at home. Brilliant product. Looks great too. I hope you make a fortune.

Love my Charlie Oven...... However, If I get to, say, 200 degrees but then want to bring the temperature down how can I do this?

Just close the vents down. It is easier to get the temperature to go up than go down. It's because of the thermal mass of the steel shelves and the oven chamber. Happy cooking
