Does cooking it affect the nutrients from the organs

We have not done our own testing, but here is some info from someone who has: "When you cook beef liver, the heat breaks down some of the nutrients but also makes other nutrients easier to digest and absorb. Liver nutrients raw: A tiny amount of 10 grams of RAW beef liver contains 1mg of copper, 0.5mg of iron, 1689IU of vitamin A as retinol, and a good amount of B12 at 5.6mcg. Liver nutrients cooked: When we cook beef liver, these nutrient amounts all INCREASE! A tiny amount of 10 grams of COOKED beef liver contains 1.5mg of copper, 0.6mg of iron, 2608IU of vitamin A as retinol, and even more of B12 at 8.3mcg." Whether there is an increase or decrease in certain nutrient's after cooking, I think we can agree its still better for you then the standard American diet:)

I wish I had a cow in my backyard to eat all the grass so I didn't have to mow. My back yard was apparently a sheep pasture at one point and even in Feb/March in PA with the cold weather some of the grass shoots up to almost a foot tall when we get those odd warm days thrown in and then it drops back to freezing and who wants to mow when it's that chilly out.
