Tempering your ice on the counter for a few minutes before shaving can help if it seems to be sticking to the sides of the machine. When ice is very cold, it can adhere to the plastic, causing it to become "sticky". There's a balance to having ice that is cold enough to shave finely, but not so cold as to stick in the machine. If you do not preserve it using sodium benzoate and citric acid, yes, you will need to refrigerate sugar water after mixing.

The Little Snowie makes shave ice, which has a powder consistency. It won't give you crunchy ice like a sno cone.

I just saw this and already have a snow cone machine but obviously not as good as this, they even said they were the top of the line but being an ice fanatic this machine makes better ice for this after watching many videos. I will be buying one from you this week and give away the other one. I am so excited, we love this as a treat and the neighbor kids know I have it so you can imagine all I make, even now with social distancing I make it work because it is so unique and fun. Not sure if I understand your question correctly, but you can preserve a gallon at a time, just divide the amount of citric acid and preservative by 5. It can be tricky to measure out, which is why we recommend making it in larger quantities and pouring off what you need when you need it. If you have further questions, please give us a call. I'm planning on getting a vendor's booth at the Cowboy trail rides would this be a good machine to start out with? Can it stand making snow cones back-to-back all day? Just trying to get a start until I can afford the bigger one

The Little Snowie is not intended for business use. If used back-to-back on a daily basis you run the risk of burning out the motor on the machine. We recommend the Snowie 1000 to new vendors- it's fast, reliable, durable and worth the investment.

Thank you for this video. This is super helpful. I have a question. I see you put the preservative and citric acid in the 5 gallon and larger containers, but do you put that in the gallon size? If I made a gallon of the syrup and I add the 4 oz (I think was the measurement) of concentrate, how long is the shelf life in a hot stand without the preservative and citric acid?

Unpreserved sugar water should not be left out in the heat. (It must be refrigerated). It is possible to preserve only a gallon at a time, by dividing the recipe by 5. It's tricky to measure out, which is why we recommend making 2.5-5 gallons at a time and then pouring off what you need to be mixed with concentrate. I see the ice looks to be very soft.... but does it have small tiny pebbles of ice(chunks of ice) throughout the shave ice??? I've always heard cube machines almost always has problems with letting tiny chips of ice pass through the blade of the machine.

Sorry for the late reply: It shouldn't have small chunks of ice, but that isn't to say it can never happen. The Block Pro does its job well, and you will get powdery soft ice every time. You can give us a call if you have further questions.

Must you remove the block in between customers if there is a time with no customers? Say like 10-15 minutes? Or can the block stay on the machine no matter what?

You can leave the block in the machine. If you're not going to be shaving for an extended period of time, then think about putting it back in the freezer, but if you have a steady stream of customers you can leave it in the shaver.
