31:06 Good point. A lot of mainland Italians or Napoletans often give the impression 00 flour dates back centuries or millenia. But ask Mauro Caputo himself or Roberto Caporuscio, it didn't exist until the 50s or 60s. True traditional and Neapolitan pizza predates 00 flour. Further you go back in pizza history the more whole and semi whole wheat was all that existed. 00 changed the texture of Neapolitan pizza to what we know it for today.

Yes, we may have babbled a bit. And we do love our cheese backgrounds. And, yes, this was early on in our Zoom webinar days! Now we know how to use the SPOTLIGHT feature instead of relying on SPEAKER VIEW. Had we known then what we know now? Fortunately, Adam went on to teach many sold out #ZoomPizzaClasses with us and we finally did learn how to learn SPEAKER VIEW and more. It was a fundraiser and we raised some good $$$ and learned a lot. Sorry you didn't get all the footage you were looking for. Come take a Bar-Style Pizza VOD with us sometime.
