They were two different cuts of pork chop. Plus the oil is hotter when you start cooking them towards the end which is the color difference as well.

Can’t answer to the super part but you bast the meat to keep it moist and prevent it from drying out. You don’t want to bast the skin because that is what you want to be dry to get it crispy. It’s hard to get something crispy if you keep it wet.
