Love your hauls and quick meals

You have been cooking the meat to long in the instant pot pot I’ve made Mississippi pot roast a few time in my insta pot which is very similar to Italian beef and my recipe call for 50 minutes with quick release I also googled just to see and found the same time frames so try cooking it at a smaller time and it should be good

I always cut my roast in quarters and cook for 75 and it comes out tender every time. Maybe give that a try (or in thirds) next time before you give up, because it is a huge timesave in a pinch.

I've learned with the instant pot and large cuts of meat it's not that it needs more time on the high pressure it needs more time on the warm setting (I really hope that makes sense 😅) like I cook it on high pressure and then just let it sit on the keep warm for a while. Unfortunately it does defeat the purpose of trying to get it done super quick.

I completely understand about the kitchen being so hot/bright right when you're trying to get dinner finished up. I do as much as possible earlier in the day, but there are times that just isn't possible. Great meals, sweet that your daughter lent a hand. Take care.

For large cuts of meat in the instant pot, I have had no issues when I cut the meat into fist size pieces (or a bit larger). I love the griddler idea, i may have to check that out. (How long did you cook them in the air fryer?) mmmm love me some taco Tuesday! Or fiesta Friday! Thanks for sharing!! 😊
