Having lived in Japan for 25 years.. I feel you put too much oil in the pan.. Okonomiyaki is best cooked slowly on lower heat for long time. I use a cast iron pan to cook.. it is the closet thing to what they use at Japanese restaurants. Japanese use pork belly slices for their pork... in Japan it's cheap.. but in the States it is a bit pricey. I substitute pork belly with shrimp for my protein. Some Okonomi shops add cheese and mochi to the inside of the pancake, Okonomiyaki is muich like pizza because every shop does it a little different

Shrimp or any kind of seafood is fantastic with this dish. After flipping the pancake you can also add cheese on top. It melts into the pancake and is so so good. Let me know how it turns out. 👍

There is a hamburger shop called "Shogun Burger" in Shinjuku. They use Japanese black beef for their burgers, so the prices are on the higher side, but they are incredibly delicious! If you have the chance to visit Shinjuku, be sure to try it at least once!🍔
