First off, I would have mixed up the butter, garlic and "green seasoning" (she should have included the recipe for that), doubled it and melted it in the microwave for a few minutes and then used a meat injection syringe to inject that into all parts of the meat. I would have then covered the chicken and let it rest in the fridge overnight to let those flavors absorb into the meat. The rest of the recipe is perfect.

Good God, I'm sorry, but what a waste of good Ahi tuna. Tuna is meant to be eating rare in the middle, not a fish hockey puck. 5 minutes per side? You don't even cook steak that long, much less a delicate fish. As for anyone being worried about rare fish, don't be. All fish is flash frozen to kill any bacteria, unless you just pulled it from the ocean.
