The Enoki Club 🍄🟫 ep.6 - Enoki Meatball Ingredients (1 serving): 50g / 1/2 pack Enoki ~10 vegan meatballs 1 tbsp chilli oil 1 tbsp soy sauce 1 tbsp veg ‘oyster’ sauce 1 tbsp plum syrup (or any sweetener like sugar / syrup) Coriander Sesame seeds Defrost the meat ball 1-1/2 an hour before cooking. Slightly chop off the bottom part of the enoki mushroom and wash thoroughly. Using a chopstick, poke a hole through the meatballs. Tear out bite size chunks of enokis and stuff them inside the meatballs. In a pan, heat up the oil on medium heat, and pan fry the meatballs. Cover the pan to let the meatball cook al te way through, occasionally turn them over. Once the meatballs are golden brown, add the chilli oil, soy sauce, veg ‘oyster’ sauce, andplum syrup. Coat the meatballs with the sauce evenly. Top it off with coriander and sesame seeds. ENJOYYY!!! Feel free to adjust the seasoning according to your taste 📍Save this recipe for later! How do I get the wraps to not break apart when I slice them? I wet my knife but the wraps will still tear is it because I soaked the rice paper for too long

Yep you should lift it up once it has been covered with water, you don’t have to wait for it to soften in the water by the time it would be very hard to work with

The Enoki Club 🍄🟫 ep.4 - Enoki Fried Beancurd Skin Ingredients (1 serving): 200g / 2 packs Enokis 5 Fried beancurd skin 1 tbsp minced garlic 1 tbsp mushroom seasoning 1 tbsp veg ‘oyster’ sauce 1 tbsp plum syrup (or any sweetener like sugar / syrup) 1 tbsp gochujang Splash of water Spring onions Sesame seeds Slightly chop off the bottom part of the enoki mushroom and wash thoroughly. Prepare a bowl of water, dip the fried beancurd skin until it becomes soft. Squeeze out the water, unroll it and place some enoki mushroom at the end and roll it up. For the sauce, in a bowl add the minced garlic, mushroom seasoning, veg ‘oyster’ sauce, gochujang, water, mix well. In a pan on medium heat, pour the sauce in as well as the enoki mushrooms. Coat the enokis with the sauce evenly, add more water if needed, cover the pan with a lid and let it simmer for 5 minutes. Top it off with spring onions and sesame seeds. ENJOYYY!!! The Enoki Club 🍄🟫 ep.3 - Enoki ‘Scallop’ Ingredients (1 serving): 200g / 2 packs Enokis 2 seaweed sheets 2 rice paper Oil 1 tbsp gochujang 1 tbsp dark soy sauce 1 tbsp plum syrup (or any sweetener like sugar/syrup) 1 tbsp minced garlic Splash of oat milk Coriander Sesame seeds Slightly chop off the bottom part of the enoki mushroom and wash thoroughly. Wrap the enoki mushroom wih the seaweed. Dap both sides of the rice paper in a plate of water. Place the wrapped enokis on top of therice paper and wrap it up again. Make sure to wrap as tightly as possible. Wet your knife and slice up the roll (1-1.5cm). In an air fryer, line a parchment paper inside. Place the ‘scallops’ inside and brush them generously on all sides. Make sure not to overcrowd the air fryer to ensure the ‘scallops’ are crispy on all sides with oil. Air fry at 190C for 20-25 minutes or until golden brown/crispy. For the sauce, add the gochujang, dark soy sauce, plum syrup, mines garlic, oat milk, mix well, and top it off with seaweed flakes and coriander.
