Do you get a stall when chilling like that? When I get to about 100 to 110 it seems like I hit a wall and can not really get it any cooler. I started doing No Chill.

Yeah I always get a stall somewhere lol 😝 I’ve started using a pond pump to get the job down quicker. What’s no chill?

@@craftbrewhero3655 Shoot even with a pump it takes a long time and I still get a stall. No chill - Turn heat off and let it come down by its self. I normally put the lid on my kettle. Bring it inside and let walk away. 5 gallon batch normally takes about 12 to 16 hours to get to room temp. Some people transfer it to a cooling cube or fermenter. I know I have been luck so far knock on wood with no infections.

@@craftbrewhero3655 I enjoy doing it I can get on to something else as soon as the boil is done and postpone cleaning up everything until the next day, for me its nice to break up brew day. I know it isnt for everyone. But I dont have to clean a chiller, pump and etc at that point. Less stuff to put up or keep up with. For me it also is nice not having to battle with ice, or water. Ive have water spray in the water as I was cooling due to leaking hoses and etc. Id rather spend the money that I would on a nice cooler, pump and any other equipment on other things.

@@jaggersbrewingco Those are all really good points! My Ocd won’t let me clean up the next day haha 😂 as for leaky hoses I like using the worm clamps called “good seal” I normally don’t have any issues with those.

GREAT BREW DAY!!!! The beer looked GREAT!! The only issue that occurred on the brew day was that the brewing instructions produce moonshiners beer, instead of ale, which is easy to do because homebrewing is based on two types of beer that were popular during Prohibition. The one type of beer was called moonshiners beer, made with single temperature infusion and high modified, malt. Moonshiners beer is distillers wash with hops added to it. The other type of beer was Prohibition beer, made with malt syrup available in markets. The all grain brewing method skips three steps that are needed for producing ale, conversion, dextrinization and gelatinization. The steps are skipped because they require hours of work to accomplish, and more brewing equipment is needed. The brewing method, chemically and enzymatically, cannot produce ale and lager, due to the way that enzymes function and chemical precipitation. The high temperature rest at 151-152F, denatured the low temperature activated enzymes that produce ale and lager, Beta in particular, which makes strike and target temperature not so useful for producing ale. Beta is responsible for conversion at 140-145F. During conversion, Beta turns simple sugar, glucose, into fermentable, complex, types of sugar, maltose and maltotriose, which are the types of sugar that makes ale and lager. When conversion occurs, secondary fermentation takes place, due to maltose. Maltotriose is responsible for natural carbonation. Beer doesn't need to be primed with sugar or injected with CO2 to carbonate, when conversion takes place. The conversion step extends the length of the brewing process, and an extra fermenter is required. Dextrinization and gelatinization are responsible for body and mouthfeel in beer. The steps are skipped because amylopectin, the starch that is involved with the actions, is thrown away with the spent mash. The rest temperatures aren't high enough in homebrewing to burst the starch, where it enters into the mash liquid, before Alpha denatures, and that is why the starch ends up in the spent mash. Amylopectin is heat resistant, complex, starch, that makes up the tips of malt, and it is the richest starch in malt. Contained in the starch are A and B limit dextrin, which are tasteless, nonfermenting, types of sugar and pectin. A and B limit dextrin and pectin provides the body and mouthfeel. To take advantage of amylopectin, mash is boiled, as in, the Hochkurz and triple decoction brewing methods. When mash is boiling, amylopectin, rapidly, enters into the mash liquid. The boiling mash is added back into the main mash, where Alpha liquefies the starch, and dextrinization and gelatinization occurs. When the starch is thrown away beer dries out and thins during fermentation and conditioning. To produce ale and lager an entirely different brewing method and under modified, low protein, malt are used. Weyermann's floor malt is an example of under modified, low protein, malt. Malt modification and protein content are listed on the malt spec sheet that comes with each bag of malt. Brewers use a malt spec sheet for determining the quality of malt, before buying malt. Malt spec sheets are online from each malthouse.
