Wasn't the outer rind a blue-greenish teal back in the 80-90's, and about a decade ago it changed to the dark grayish rind flavor has changed too

I've not come across a smoked version of this cheese yet, but I suspect the smoking of it might clash with the "aromatic" nature of this cheese :)

It is a natural rind so yes it is definitely edible. But when it comes to its taste it's up to you to decide whether you like it; if you think it's not up to your taste, you can discard it :)

@@thecheeseladyuk Because of mites that feed on the rind. Most of all rind cheeses have these mites, but mimolette, I believe, the mites aren't removed until the very end of the process. The FDA put strict rules in place because of this, and again, I believe you can purchase mimolette, but it has strict rules on the amount of mites it has per square inch. TL;DR: Americans can't get over social stigmas involving insects and the like cause we're sensitive babies.

Cheese mites are actually on the rind (not in the cheese). Cheese mites are a natural part of artisan cheese maturation and are present on most natural rind cheeses.

@@Uzy_71 I’ve ate it and it does not contain mites. They’re only used during the making process. Also the mites are only on the rind when it’s made and it’s free of mites after.

@amazinggamer8008 nah mites are definently present in some quantities in the cheese if you look it under a microscope. I dont even know how they can be removed since their size is microscopic and they are in millions in a decent size of that cheese.
