My batter came out too dense and stiff so I had to spread it around my pan rather than pour it. I couldn’t drag a skewer to get rid of air bubbles in the batter so I ended up having a lot of bubbles. I suspect 3 possible things may have gone wrong. 1). The butter in the mix may have chilled over time in my kitchen. 2). I whipped my egg whites too stiffly. 1) My 4 eggs were too small which result in less liquid in the batter. I also prepared 2 9-inch short cake pans because I don’t have a large one. However, I could only fill one with how little-batter I seemed to end up with.
