I have always used lactic acid to adjust my PH in the mash and kettle. I always went with 5.3 in my mash for lighter beers and 5.5 PH for darker beers. I don't use a PH meter, just Bru"n Water. I certainly can adjust the mash PH to 5.5 though. Will my lagers be any better?

Is it ok to use 6% of carapils, in the grain bill? Made a neipa 3 days ago, 7.4 kg pilsner malt 1.2kg wheat malt 600g flaked oats 600g carapils. Heaps of hops.... 46litres into fermenters.

Probably far too late but yes, up to 10% should be fine, consider adding some Chit malt as well and replace some of the Pilsner Malt with something like Golden Promise.

Hola Daniel, Sinamar® se puede adicionar perfectamente durante la hervida, de hecho mientras más tarde mejor. 10 minutos antes es una buena opción, la idea es que el Sinamar® tenga suficiente tiempo y movimiento para homogenizarse con el mosto. Happy Brewing!

@@WeyermannSpecialtyMalts excelente!! Gracias! Una duda más, Sinamar no aporta en el OG de la cerveza vdd? O no debería! Como se comenta en el video, viene de maltas tostadas las cuales no tienen productos fermentables… esto lo pregunto porque en softwares como Beer Smith viene Sinamar con un yield de aprox 40% haciendo que aumente mi OG de mi receta. Lo que hice fue ponerle 0% de yield en BeerSmith. Pero solo quería confirmar con ustedes! Gracias de antemano por su tiempo!

Sinamar® tiene 40% de extracto ya que es un extracto de malta. Sin embargo, este extracto no contiene azucares fermentables. En la práctica, las dosificaciones de Sinamar® son tan bajas por su alto color, que el OG se debería ver poco afectado. Saludos!

Hola, para obtener el mejor efecto aromático y de sabor, así como el color aportado por la maltas caramelo, es mejor macerarlas junto con las maltas base desde el inicio de la maceración! De esta forma se garantiza una máximo beneficio del uso de las maltas especiales Weyermann® en combinación con las maltas base Weyermann®.

Caramel malts are made from green kernel yes? So how is done for example Caravienna when Vienna is already toasted malt? The same with Caramunich?

Hey Suchejroo, yes, after germination the green malt is transferred directly into the caramelizing drums. True caramelization of sugars can only take place in rotating drums. That happens for all our caramel malts, including Weyermann® CARAMUNICH®. The green malt is transferred from the germination boxes into the drums, without being kilned in between. Following different recipes and procedures inside the caramelization drums, the final product acquires its unique sensory characteristics and color. In other words: Weyermann® CARAMUNICH® is not made from Munich malt, they are two different products with completely different production processes. Happy brewing!

Hi Kneenibble, they are bitter and rich in proteins. They would give the beer a protein, astringent bitterness. They have low or no starch contained, which is needed to produce a beer! That’s why Weyermann® cleans all its malts to deliver always highest quality malts for great-tasting beers!

Of course you could! Our Weyermann® Munich malt 2 is carefully kilned to produce color and aroma, but also to have enough enzymatic activity. By using it at very high percentages, you can expect to produce a beer with a higher mouthfeel and body than beers brewed with paler base malts. Happy brewing!
