I’m a property manager for a small company who have about 10 pubs which are rented out and the biggest issue with hospitality that I’ve seen is the chefs and managers. Chefs are so unreliable in terms of staying at place for long and so inconsistent with their food quality. They can be good for 1st month and then they just slack off. Front of house /general managers are also quite disappointing. Not many people take pride in their work anymore. Out of all the pubs/restaurants in our town there is probably only about 5 if I’m generous that are worth going to. I think with prices naturally going up people can’t afford to be mediocre anymore and with all these cooking shows on tv it’s raised the bar for people’s expectations. One of our pubs we do run ourselves which is wet led doing 7k a week and we want to do food to get it to the next level. I’ve interviewed 10 chefs or tried to… half didn’t turn up and the other half were either no good or when offered the job didn’t turn in! We’ve just had 2 tenants request this week to get out of their leases! Also across 5 of our pubs they’ve closed and re opened different companies for over 500k including ripping off suppliers and HMRC.. that’s just one town! It must be hundreds of millions when you look at that across the country! Ha so in my summary and perhaps unpopular opinion I think a lot ultimately need to close so that the others can survive as it appears no one is truly winning

This is what pisses me off when I see and hear people who go to restaurants and say "you paid £29 for a steak what a rip off" they don't realise your not just paying for the plate of food .. a percentage of that money goes to everything you enjoy in a restaurant visit,maybe of people get their head round this they might spend a bit more to support their favourite places.

The indigious Norwegian Sami people has a pot called bidos. Back in the day the Samis were called "laps" (pl), which today is an offensive term. Bidos reminds of the Norwegian lapskaus. Bidos is made of rein deer meet, broth, potato and carrots. No onion. The Norwegian lapskaus might come from the Sami/Lap dish bidos (Lap-skaus/Lap-scouse) but the Norwegians called it Lapskaus (Lap's kaus or Laps' kaus). Brought Lapskaus to Liverpool, where it's called only scouse. This is just my personal theory

You don't make scouse with ox cheek or shin of beef. Scrag end of lamb is the canonical meat for scouse.

But as I say in the video each family has their own way and tradition . Beef is much more common these days and not with ox cheek or shin. Ox and shin where the cheap cuts back in the the day along with mutton and lamb . Which is a shame as ox cheeks price has rose so high and is back in the FAD stage. when the large community of Welsh hit lerpwl stewed lamb or mutton was referred to as cawl. I do believe though any stewed meat (or braised) with onions carrots and spuds has a PGI status of being Scouse . I love how the dish is such individual to the family and is steeped in each family’s DNA

@@richardmuncey9860 in the first part of this process it’s more building flavour into the stock . Most would just use stock cubes . But tbf oxo cubes which were common after WW1 wouldn’t have had garlic in them just more a personal preference when building the stock up .
