NEVER soak fruits for an extended period, in a plastic container. The acid in the rum/wine acts on the plastic causing the chemicals to leech into the fruits

As a kid growing up., grandma always insisted on a glass jar 🫙 and then it would last for years all she did was ad rum and whatever fruit needed.!!

Hi Toya! Looks absolutely delicious. And your recipe seems perfect, w/o unnecessary ingredients. But now I have a question for you: I have seen recipes for this that use yams and flour and cornmeal (in addition to sweet potatoes). Do you know why those Jamaican cooks would use so many starches? Are they trying to achieve a particular texture? I mean, I can understand using *one* binding agent, flour *or* cornmeal *or* yams, for example. Buy why do some recipes have all *three* ? Thank you.
