Ingredients needed: Olive oil Pepperoni Melted butter 4 cups all-purpose flour 2 cups whole milk 2 Tablespoons sugar 1 1/2 teaspoon Kosher salt 2 1/2 teaspoons active dry yeast 1. Warm up milk to 100-110F 2. Add the active dry yeast + sugar - after 5 minutes it should be active with a good head of foam on top (like a well-poured beer) 3. Mix the flour + salt in stand mixer 4. Mix together wet and dry ingredients. 5. With dough hook turn on stand mixer to “1”, scrape down any flour that sticks to the side of the mixer 6. After dough ball forms, prepare a bowl for dough to rise in, coat with olive oil 7. About 1.5-2hours for dough to rise and which point dough has doubled in size and doesn’t spring back when you press on it 8. Cut and prepare pepperoni sticks: remove collagen casing, 3.5” long sticks 9. Optional secondary rise on dough: press down on the dough and let rise again for another hour 10. Portion out your dough - 8 large rolls or 12 medium size rolls 11. 15 minute rest on dough - clean up kitchen, preheat oven to 350F 12. Flatten out dough like miniature pizzas (about 1/4” thickness) 13. For the large rolls about 3 sticks of pepperoni rolled into each. 14. Pinch the sides closed and roll them over to trap in pepperoni grease while baking 15. Baking sheet lined with parchment paper 16. Coat the rolls with melted salted butter 17. Bake for 25 minutes at 350F

Hello, my mom was born in WV and my grandfather and Uncles worked the coalmines I have a couple Uncles that are still in the mines from a collapse when I was very young, anyhow I grew up going to Country Club Bakery to buy my pepperoni Rolls until I learned to make them. I love your recipe and what a great tutorial Thank you

My Italian grandmother made this exact recipe for grandad (in a batch for the week) and he carried two in his lunch pail to the coal mine in Preston County, WV every day. Nona sometime include peperoncini peppers or banana peppers or what ever was ripe in the garden.

I grew up in Marietta Ohio. We had a baker called Brownies. Unfortunately the bakery burned down. They still sell the stick pepperoni rolls at various businesses around town., but that are not the same. The ovens have a lot to do with it.

Yes, a lot of people who want a “cheater” recipe will use frozen rolls. I’ve done it a time or two. But honestly, by the time the rolls are defrosted, you could have already made a batch.

I followed this recipe to the letter!! And my dough dies not come out kije theirs dirs after mixing. It us very very sticky and almost like thick paste. WTF? Like serioysly? The onky way i could have done thus more the way they did was to invite them to my hoyse ro watch me do it.

I had the good fortune to meet Jim at Clifftop in 2008 and 2009. I'd heard a little bit about him, but it has been a lifelong honor to have sat down and played music in his presence. Oh my, I was born and raised outside Bridgeport, West Virginia ... in one of those little hollers. I went to the Bridgeport schools and graduated from Bridgeport Senior High in 1973. I lived there for 33 years. That's really close to Lost Creek! Thank You for the memories! Pepperoni rolls are just one of the things I really miss. I like mine plain, just the pepperoni and bread. I have thousands of wonderful memories of my childhood growing up in that holler. We were poor as dirt, but we had good things to eat because we grew everything. I haven't been back there in years. I should do that before I die. It's funny I ran across your channel today. I had made a big crockpot of Italian Meatballs and Sauce the other day and last evening I was putting together supper. An open faced Meatball Sandwich! Oliverio's Peppers came to my mind. I got online and found they had a website and so I ordered 3 jars of their yummy peppers. I hope I have some meatballs and sauce left when they get here LOL.

I moved away from the western PA area about five years ago and really missed pepperoni rolls. I tried a couple of different doughs and never found quite what I was looking for. This is as close to perfect as I have found for pepperoni rolls that are what I was looking for. Thanks for sharing!
