What's the rule of thumb on how much bigger my arm cap should be to my arms eye measurement because I need it slightly bigger for the ease of the garment?

As a general rule, it should be between half inch and one inch, so it's safe to say that approximately 3/4" inch is "average", but ultimately it depends on the fabric! And, of course, it depends if you want a lot more gathers/shirring in the cap area, then obviously it will need to be more than 3/4" inch. ~Hope this helps...

how do you find the center "apex" though?

Well, here's a couple of ways: 1) If you have a dress form the apex is the center of the bust, the bust tip. 2) if you have a pattern that you buy at a fabric store, usually the pattern will have the apex already marked. 3) If none of the above is an option, you draw an "imaginary" line criss-crossing from the Center Front to the Side Seam at Waistline and from Shoulder/Armhole Tip to the Center Front/Waistline. ~ Hope this helps...

Thanks for the insight and knowledge you pass along in your videos. Question: Can you provide a video on the differences in fabrics of the same material. For example, what is the difference between silk organza, chiffon, and crepe/muslin?

Well, Robert, I will have to make a separate video about that. However, I strongly suggest that the best way to answer your question/inquiry is as follow: Go to your local fabric store and start touching fabric!!! Sounds crazy, I know, but it's the best way to "feel" the difference, and "learn" the difference, between the 'example' that you described in your question (organza, chiffon, and crepe).
