EXCELLENT tutorial! Wow!Really helpful techniques. I use silicone mats in place of wax paper & the plastic bag. i’ve been studying & experimenting with pie dough for years and i’m definitely trying the water mist. I’ve also tried this frissage method (smooshing the butter into the flour by hand) vs the food processor & found the benefit negligible. Now i see why it didnt work for me. Her technique for bringing the dough together is genius, and promotes good layers/lamination without overworking the dough. I’m curious why she didnt even need to chill the dough before rolling it out. Dorie Greenspan doesn’t bother with that either. I’m so glad i found this video. ❤

I see so many people from other countries here, so allow me to join in from the Netherlands! When I went to the beach in the south-west of the Netherlands, with my friends, their mum would drive us and catch a bunch of periwinkles for us. It is an acquired taste for sure, and thankfully she did all the hard work of taking out all the little buggers for us kids - letting kids mess around with needles or sharp forks isn't the handiest. Fond memories of the beachtrips, fond memories of eating these little things with some chips/fries! :)

If you want to make this recipe more authentic to the NYC style use a half fup light brown sugar and q 1/2 cup granulated white sugar, with the cinnamon also add about ¼ teaspoon of ground nutmeg and a little lese than a ⅛th teaspoon of ground clove, also add a teaspoon of vanilla in with the water. Also I added the salt with it.
