Using milk crates and jam packing them with chain fused mortars isn’t professional, it’s dangerous. One CATO and you’re sending shrapnel through your audience. And running around in bare feet or flip flops? Display was good, but too many safety hazards on display.

😂when you get adrenaline from the display you know it’s special!!! This had to be so fun to set up and know what was really about to go down right before the fuse was lit. It was basically a 15 min grand finale. I had some buddies drop like 20 grand on a bunch of cakes and fuse em all together and lit the fuse and it just went crazy for like 7/8 minutes. Was pretty cool but I think they just randomly put them in order except for the huge finale cakes at the end. You can definitely tell these guys planned this out tho and have done this before. That’s gotta be 35k in fireworks 😂😂😂💀💀💀Bravo gentleman!!!

When I purchased my Koda 16 in 2020, the first or second thing I tried was the secret ultra low setting for NY or Roman style pizzas that require lower temperatures and a longer bake, just turn the knob to the 10:30 - 11 o'clock position.

76% hydration??? . Don't do it stick with 60-62%. . Your flame is too high. Lower flame and keep turning. I have the same oven. Caputo flour is best cooked at 60-62%hydration with the Ooni 16 trust me.

I'll keep experimenting. Overall I don't think I did too bad, considering it was my first time. The pizzas were delicious. I just didn't eat the burnt parts.

He's right with this comment, it's good to experiment but 72% - 76 % with Caputo Pizzeria flour is asking for trouble, don't go above your 65%

Nice oven. I think your hydration might be a bit low. Your Cornicione rose nicely but seems a bit stiff. Depending on your flour brand and type try a 48 to 72 hr cold ferment with a 72 to 76% hydration. Your Cornicione will be puffier and lighter

Thanks. I was also disappointed with the amount of oven spring. I added the recipe to the description. I used 65% hydration with Caputo 00 flour. 24 hour room temp rise. That said, the crusts were actually very soft and delicious, when I didn't burn them of course. I just got back from a trip to Italy where I experienced the real deal for the first time. So yummy!

Nice Pizzas, try 820f then turn it down to Low, this usually takes 2 mins or just over to cook but it gives you more control and still get a great tasting Pizza, just subbed to see how you get on with the next ones, BTW what percentage of Water to Flour are you using? 👍

Awesome video. How long did you expose each frame of the timelapse? How did you do it? Because you have at the same time the night sky AND the telescope. If you take let's say a 20 sec exposure for each frame, wouldn't the telescope be a bit blurry? Thank you :)

It's been a long time (4 years), but I'm pretty sure the camera was set on aperture priority at a relatively high ISO (probably 1600). At dusk the exposures would have been a little lower, but once night comes it would have maxed out the exposures at 30 seconds each. When the telescope slews, it takes place in just one frame of video, since it will slew in less than 30 seconds usually, so you don't notice the motion blur.
