Man that looks great. When I make dirty rice I only use ground chicken parts (hearts, gizzards and livers). If I'm making rice dressing I'll use some ground beef and pork. Regardless, your momma's recipe has the best of dirty rice and rice dressing and I'm going to give this a run. I've subscribed. Kudos.

I agree with you about adding salt but what do you think about adding the salt when they are soaking overnite, seen a lady do that in other video, she called it brime and claims the red beans were tender & flavorful, I presume she rinsed the beans after soaking which would have removed the salt 🧂

We were introduced to dirty rice at the breakfast table. I believe they included a good bit of sausage. At any rate we still love it in the morning with eggs .

I’ve been having a craving for dirty rice lately, and went in search of a refresher video! I make this with the same meats Mark uses (the chicken livers really add something special, IMO…he’s right - don’t be afraid, y’all!), but instead of hot sauce I always chop up fresh jalapeños and add them in with the trinity. I know that may not be truly authentic, but we just love it in there! 😋 The parsley is wonderful, too! Thanks for such a heartwarming presentation - and hugs for your mama & her yummy recipe!!🙏🏼💕 To the poster who mentioned not going back (to a mix) after trying this…I can just about guarantee that’s a true statement!😊😁 Also - I’ve found a good Cajun rice freezes well, so don’t be afraid to make a huge batch…in the case there ARE leftovers (there may not be, lol), it’s something to consider. Cheers!

To that point, plain cooked rice freezes well, too! Keep plenty of that on hand so that the finished dish comes together even faster!

Sometimes I use canned chicken. I also use all the juice... so it doesn't dry out. The chips soak up the moisture like crazy.

Looks delicious. My whole family is from south Louisiana (Pop never even spoke English!). Dirty rice is my FAV and now my sons but have always just used Savoie rice dressing mix, will try this soon!

Now many folks say white folks can't cook.....but those people haven't been to the country. Be it north or south, its something about the country that people from anywhere can cook that HOOD food. And I can tell, just by his accent and his ingredients this is a good recipe!!! None of this light non fat gentrified vegan mess here! Just menaws good time tested wisdom!! I bet he knows how to cook poke salt greens as well!

. You should famous by now if you're not. I love your attitude about it has to look good on the outside of the bowl. My spinach leaves are placed one at the time against the glass and my boiled eggs are sliced and placed around the glass bowl inside. So many different varieties that you offer. I just subscribed so everybody can get happy after the pandemic
