Great job, I would like to make a suggestion on using the pressure cooker. Use less water cut it by one third it will cook fine and you want have to reduce the broth as much. And remember that the hottest part of the pressure cooker is the top so his nose will cook fine out of the water. Hog Head Cheese is the poor man's caviar.

@BigJohnsCooking I am 73 years old and I have loved hog head cheese and I remember when I was a child every time we butchered a Hog we would take the head and legs all cleaned to an older lady in the community and she made the best I have ever eaten, but she could cook anything and it would be delicious. My regret is I never went down and helped her I could have learned so much, I called her Granny She was family to me and she knew how to make a bunch of young boys like myself behave. I’ve eaten Polk salad for about the past 3-5 years. I love it more and more each time I eat it. I sauté some onion in olive oil and maybe garlic. Add the Polk salad. Twirl it around to blend veggies and welt a bit. Then I add enough water- not too much. Cook on m-low for about 20-30 mins. That it. Serve up
