It doesnt taste mustard-like. But it acts as a tenderizer for the meat due to the acidity, a binder for the seasonings to stick to the skin and helps the skin get crispy.... Just like mustard on ribs and lamb before adding seasonings acts like a binder and aids in tenderization/moisture.
