When he heard the song he thought it would be great for Brenda's project so he got Mariah to sing the demo for me.” The song was never recorded by Brenda, but Mariah's version of the song leaked to the internet in 2002."

Mariah is an excellent mimick so she is downplaying her range to sound more like who the song is intended for. She could have blown this out of the water if she wanted. She was just having fun and vamping LOL.
