I have never ever seen any sushi chef hack a urchin around the sides like that, at least 60 various high end sushi places in my life states and overseas. They cut around the mouth removing the shell around the mouth in a circle they lift it out rinse and all the leaves of the roe stay intact completely perfect and they spoon it out whole. Your method tore some of the roe as well. I've never ever seen a trained sushi chef do that hacking you did.

This is nuts... The roe from sea urchins are not eggs, they are gonads (testicles and ovaries). They are mixed together within the urchin, however the testicles are firmer, more granular, more vibrant yellow, appear near the outer edges, nearer to the spines and have a more delicate, creamy, and slightly sweet flavor. The ovaries have a softer, creamier texture, are located closer to the center, range from pale yellow to a vibrant orange and have a richer and more pronounced briny flavor. They are also killing our Kelp forests.

You totally missed the point..... firstly , I'm guessing that you rinsed the Roe in fresh water?... a quick way to losing its taste. Secondly the last method is preferred by people in the know because the liquid is preserved, for the flavor and dunking bread into...sea stock.
