Before putting the cut part into water, leave them out somewhere dry and warm to form a kind of crust on the cut to protect from rot. though I'd recommend using the soil method, even with the crusted cut potatoes. Finally, use the original stem half of the potatoes for the best results

I cut mine in half, placed them in water just to cover them. Once the greenery began to grow, I placed them in a large pot for the winter, The vines continued to grow taller, and are holding on to a tall stick that I place in the pot for them to climb. Now they are 24 inches tall and still in the pot and all twined around each other. Since I live in Canada, I can only put them in the ground at the end of May. I hope to get 4 potatoes! lol this is my first attempt at growing them. Good luck!
