I suggest you can use non-alcoholic wine or minimal amount of wine vinegar. The taste may vary though but if you can adjust the taste well, it may turn out good.

Thank you for your comment. 😇Yeah, was thinking about that but since I've fried the chicken in 2 batches as I've cut it in half, the drippings and excess flour had became too dark and I'm afraid the sauce will be bitter.

I'm South African, and I don't think this is South African. Reason being, I've traveled most of my country and never seen this. The only time I've seen and tasted something like this, was from our next door neighbour! Which was about 25 years ago. They have left South Africa, and sadly, with her recipe😢 I've been trying to replicate it just by my memory of taste. Just couldn't. In 2008 I went to Iran and ate a similar dish, a little bland. Made with turmeric, black pepper, salt, and I'm not sure if tomato was added, but definitely saffron. Mine is similar to yours. I start with skinless chicken marinated in turmeric, salt, pepper, ground cumin, and kashmiri chilli powder. Sauce is made by sautéing finely chopped onions and garlic. Then tomato paste and blended tomatoes and saffron. Once almost done, the chicken that I forgot to mention, should be seard or partially cooked in oven, added. I'm really gonna try your recipe. I can imagine the taste 😋 maybe it will bring back some good memories of some good neighbours😢 Thanks for your upload😘😘😘💞

btw incase anyone is wondering , u dont want your noodles fully cooked, u want them al dente, so they can finish in the cream, she actually overcooked her pasta here.

Thanks for your comment. In a way, you're right and I was actually mindful of the pasta being overcooked and adding cream, the cheese didn't take so much time so I was happy with the pasta still. But yeah. Whatever ways to cook just to make the pasta safe from overcookong, it's definitely fine.
