Why use a third pan for water, the whole bottom of the smoker is for the water and it helps manage the grease run off from the cook. On my 20x42 its the only way I cook.

I would cook it at a lower temperature for longer, I've seen the video you were referring to and I'm literally getting ready to do this myself. I noticed that their prime rib was completely pink edge to edge. That lower cooking temperature I think is key

@@SmokedMidwestBBQ I'm going to go with 275° cooking temp and pull it at 110° with a long rest. I also noticed that they had a substantial amount of salt over the top, I think that is crucial. There was no collapse around the meat. We'll figure out their secret 👍

Try setting it to 275 instead. Do 1 hour and 45 min unwrapped, then 1 hour and 45 min wrapped. 3 1/2 hours and you are done.

While in northern CA last week, we saw them in quite a few restaurants by the ocean. Whole Foods has fresh oysters for $12 a dozen with an Amazon Prime membership. Give them a try, they are super delicious!

Gonna try your method today, I have the XL onyx. I notice your chimney top is screwed up high, why is that? Does it make a difference? I also notice that your smoker was really smoking when you got the meat off. I have my at P4 and it does not smoke like that. I purchased a flame defuser from amazon which keeps the temp the same throughout the cook. The temp in the smoker is the same as the temp I have it set at

Nice! I have the chummy top high as I think it helps with the temp swings and keeps it more consistent. I don’t ever use the P settings, rather I just set the temp and let it ride. Good luck with your ribs and thanks for watching! 👌

The programming is designed to fluctuate the temp to produce smoke. Quite a few pellet smokers do this.

I cant get mine to smoke, so I bought a smoke tube. i have a digital display I wonder if I set it lower ill find the "smoke" setting? iv been told it smokes between 200-225, maybe its my pellets? or I'm just used to my traditional off set smoker with wood chunks that smoke like a trucker

Could be your pellets. Usually, with a pellet smoker the lower the temp equals more smoker. You could smoke at 200-225 for the first few hours and then bump up the temp to finish.
