Would you recommend only dried apple or could we also do this with fresh? I have an apple tree and don't know what to do with all these apples!

I love making this soup at home. I use blue cheese instead of pesto, goes really well with the sweetness of the roasted tomatoes!

So my mom, who is Russian, makes something similar - but not a soup. You might like it. Normally cooked in a dutch oven - First she browns the sausage meat and sautees minced carrots (and if she's feeling ambitious that day, then also onions). Then she puts all that together in the dutch oven (she often just cooked them sequentially in there cause she hates getting pans dirty) along with cabbage. Mixes it all up. Adds some tomato paste and cooks, adding liquid if there's none so it doesn't burn to the bottom. Broth is best but water can be fine. Also adds whatever spices she feels like that day - smoked paprika is frequent. Simmers for about 20 minutes or so. So very similar concept. I've also tried it with rice vinegar instead of tomato paste which I think gives a cleaner flavor, but up for debate.

@@lazulin thank you so much for sharing, I have a recipe similar to this! In my book! We call them cabbage rolls! What do you call them?
@lazulin2 ай бұрын
@@HaydenDelishaas No rolling things up in cabbage involved with our version, although I've definitely eaten cabbage rolls before too. Mom never had much of a name for this one - she'll just say she's making "cabbage" and that's it. I know it's just one of those things she came up with while trying to use up ingredients in the fridge & I cook it because these are all ingredients that are easily sourced from the local farmer's market.

Pierogi do not have to be potato dumplings - I've had some with duck meat this week, or they can be sweet with a white cheese and fruit filling - but ones like these, with potato and onion, are known as Ruthenian and are a classic alright.
