I think you only need to leave the boss area after the fight and then it will trigger the cutscene. Climbing on top of that hut will probably count as leaving the area

This is not true. I went to both the casino and the arena after talking to and turning down Clever. After my trip to the arena, I choose not to fight, went back to Clever and talked to him and accepted his offer with not issue.

What's funny to me is that I found and was able to open that chest w/out the key. Later, after finding the journal and reading it, I received a quest completion notification. I hadn't even found the damn key yet! This game is full of bugs and glitches!!!

Geralt might successfully get out of O'dimm's contract for now. But after knowing his usefulness O'dimm may return to him anytime. Just as he said before leaving Geralt: "But I do know if I ever have trouble collecting debt, I shall turn to a Witcher." Knowing O'dimm, he may put Geralt in a situation where he is left without a choice but to be forced into a contract to do his bidding.
