I don't k ow whether that is a good metric. Heat transfer depends on the material properties of the stove top and the pan. The amount of power the stove can pull is limited, so the only way to heat up faster is to get much hotter than needed. This in turn can damage the surface finish or the pan. Converting electrical power to heat is almost always 100% efficient, so what are they trying to demonstrate here?

It depends on the pan too. Cheaper ones boil about the same. Look for ones with magnetism on the side.

I have recently purchased a 48" range. Are there cooking classes in Napa? There is quiet a learning curve with this range. There should be a cook book to help you learn the ins and outs of this amazing stove.

Signature Appliances are AMAZING! I've had the chance to visit their Experience Center in Napa, CA and have a meal prepared by Chef Nick Ritchie and his team, and it was unforgettable! While you're there try the heritage wheat breads and see if they're better on your gluten issues. Theoretically they would be.
