Why would you expect the dough to increase in size without using the yeast? You said it twice to rest the dough till it doubled or rose but how?

Tx for your video.. as you flatten your naanbread, you dip your right hand in a fluid.. Is that oil? And if so, is the oil at the outside or at the wall of the oven? Tx. George

You use oil so the naan doesn’t stick to your hand and sometimes you put a little water on the side of the naan that helps to stick to the oven , also you use water to wet your arm so it doesn’t burn the hairs !! Next summer I will do some more videos how to use the tandoor and how to make the different naans!!

@ don’t be scared of the heat , you must have everything ready the oven must be the correct temperature, then you must be ready to go in and out quickly!! That’s the key but that takes a lot of mistakes before you will get good naans ! Good luck!!

Hi again Chef, i wanted to ask, if you could once again share some of your wisdom: when making a big batch, approx 20kg onion, at the start is it required to add water? Since eventually the onions will release alot of water? And if we do add water at the start, whats the reason behind it ? Since adding water will make the onions boil indtead of “cooking” ?

You can do it two ways adding just oil , bring to the boil , but it’s important to keep stirring!! Otherwise it will easy burn but it will cook quicker, then you add water! The other way is add water at the beginning like I do when I’m showing how to cook my base gravy!! Good luck

@@neilruparelia5257 if I was you I would cook the base gravy I show on my channel!! The gravy is the same which ever method you cook , just a little quicker, I would need to make another video showing that process!! Good luck!

It’s coconut powder, if you can’t find just put desiccated coconut in a grinder and grind into a powder!

In a bowel add 3 Tbsp of coconut powder 1 Tbsp of almond powder 1 Tbsp of sugar 1 tsp of sultan’s chopped Mix together with carnation milk in to a firm but soft paste and roll in to a ball! Filling made! No watch my Nan videos and see how I put the minced meat filling in to the keema Nan do exactly the same with the peshwari naan mix you have made and either cook under the grill or in the tandoor!! Maybe when I get time I will make a video showing different types of naan !! Good luck

That’s right you precook them the same way as you precook vegetables, so leave out the veg and only use potatoes!

This is my one pot chicken madras recipe created so you don’t need to make the base gravy! But if you already have base gravy then just cook the precooked chicken! And prepare the curry watching my tutorial!

Hi, just subscribed. Watched quite a few of your videos and noticed in some curries you don't reduce, scrape or caramelise .Do you think this compromises on flavour or is it just a BIR thing that isn't necessary in your style or technique? Thanks for your insight,recipes and knowledge.

What I am showing you is real BIR curries, and how it’s cooked in a restaurant, all this so called caramelisation is nonsense!! If you watch my video you’re see all I’m doing is stirring so it doesn’t burn on the sides, and I’m just getting the curries to the right consistency and then the curry is ready !! Watch a few more and you’re see what I mean !! I hope that answers your question, and remember I’m a professional and this was my profession for nearly 40 years !
