Just took an Oryx here in New Mexico high country. It looks a lot like Namibia here. We have Oryx and Ibex, imported from Africa in the 1940's. They flourish so well because our climate is just like yours. What a bounty to fill my freezer for more than a year. Bless you, my friend and thank you for the recipe.
