quick question: I dont have a stand mixer, so will kneeding by hand with a longer duration produce the same results? Is ascorbic acid the same as bread improver or is it similar to vitamin C? I have vitamin C but not ascorbic acid..

Vitamin C and Ascorbic acid are the same. Kneading by hand won't produce the same result. When you're kneading with a stand mixer, especially so vigorously like in this recipe, you're incorporating a lot of air. The mixing also contributes to the whiter inside crumb. You still may get a great bread when kneaded by hand, but it may not be as white as you see here.

Gas ovens are a little more challenging to get high humidity during the steaming stage of the bake because they need to vent the exhaust air.

Yes that's correct, the first 8 minutes is a high humidity, and the last part should be a dry heat.
