quick question: I dont have a stand mixer, so will kneeding by hand with a longer duration produce the same results? Is ascorbic acid the same as bread improver or is it similar to vitamin C? I have vitamin C but not ascorbic acid..

Vitamin C and Ascorbic acid are the same. Kneading by hand won't produce the same result. When you're kneading with a stand mixer, especially so vigorously like in this recipe, you're incorporating a lot of air. The mixing also contributes to the whiter inside crumb. You still may get a great bread when kneaded by hand, but it may not be as white as you see here.

Gas ovens are a little more challenging to get high humidity during the steaming stage of the bake because they need to vent the exhaust air.

Thank you so much for this video and recipe. My problem with all the other banh mi recipes was that the bread was too shiny and wasn't developing a flaky crust at the end. This is the first time I've been able to get it perfect thanks to your tips. So proud of how it turned out!!

Yes that's correct, the first 8 minutes is a high humidity, and the last part should be a dry heat.

You mentioned there are dough improvers you can use rather than egg. Can you mention what those are? Is one of the dough improvers diastatic malt powder?

In brazil there is a very similar bread but it is called french bread 😶
