Looks like a usual saddle stitch. Probably some holes are repeated or skipped to align the circle with the rim, but since it's on the inside it doesn't matter much. Another option would be to do a box stitch and have the threads visible on the outside without inverting the leather once stitched. It's slightly harder and I would recommend practicing as the first time you do it you might tear out the leather.
