Good video, just a couple of notes, you don’t need to do some of things. Like all ingredients can be put in together at once, ideally you should slow mix first not fast mix. You don’t need ice water or ice pack on bowl at all. Just use fridge water. In all my years of baking never used iced water at all in any dough
