This looks so delicious! I can't wait to make this chutney but I might reduce the amount of chilli, ginger and sugar though. I am going to use it as a dip or spread with slices of toasted/crusty baguette. Can it be heated up after taking it out of the fridge or is it better served cold? I am so glad that this doesn't contain onion. If I decided to add a tiny amount of finely chopped coriander leaves and stalks, at what stage should I do this? I am guessing that it would be best to add it towards the end and to avoid cooking it for too long. Will the chutney still be OK to refrigerate with coriander in it or will the coriander spoil the flavour or overpower it? (The flavours might intensify the longer the chutney is kept in the fridge and I don't want it to taste purely of coriander). If I used crushed garlic or roasted garlic purée instead of finely chopping the garlic, would it burn in the hot oil or become very bitter? Thanks for giving very clear and precise instructions.

- yes, you can re heat the chutney. But it tastes as good if you eat it straight out of the fridge -A little bit of corriander towards the end is fine. -Use finely chopped garlic
