To fight that version of Isshin you should obey your Father, when he says you to betray Kuro. Its right after getting Mortal Blade (Mount Congo) , Lotos from Palace (kill Guardian Ape) and Red Stone (Kill Corrupted Monk). Then, you should inter Ashina Castle location, go to "Lookout Tower" idol (that place, where you fought Genichiro). There will be Great Shinobi Owl, and after a short cutscene, he will give you a choice: stay with Kuro and betray him or obey Iron Code and betray Kuro. You should choose "obey Iron Code" or something like that. Then you'll get Shura Ending and you will fight Isshin Ashina and another one boss without break. Good luck if you will try that ending

not released, and wont be for a long time. But it is from Resurrection mod's newest patch. You can play the old one but you wont be able to do this.

I’m pretty shure that there is another mod that lets you do this dodge, but maybe i’m confusing with Elden Ring mods. Sadly its not as great as Ressurection, I wish i had a good pc to play Sekiro modded😢
