Dumb question... is it OK to use the egg whites in the frosting without any cooking because they are pasteurized?

Yes. Traditional Swiss Meringue Buttercream has you pasteurize them in a double boiler and then you have to wait for it to cool. This way is so much easier.

I grew up making this for red velvet cake but we used crisco instead of butter. Any real difference in your opinion? Also, I use a touch of cornstarch directly into a cream cheese frosting to make it stiffer - do you suppose that might add a touch of crust to this? Just found you and love your video. I grew up with this frosting too - with Crisco! Butter is better for your heart so the trend now a days is for heart healthy. A touch of cornstarch in cream cheese frosting shouldn't make it crust, in my opinion.

If it's hot and humid enough to melt your sugar dome, there's not a lot you can do. Our survived a 80 degree day. We kept it refrigerated until serving time.

I confuse what time you cook the eggs? First was orange juice to stemmed and 2 was butter,sugar,cornflour and last you say put egg instead of juice

I just love how delightfully deranged your videos have become. Great recipe as always and great explanations of the methods. I would like to have seen a clearer shot and explanation of stiff peaks (so many folks don't understand it unless they see it). An upside down bowl does the trick! Love you as always Val! Xxxxx
