Not everyone can afford San Marzano tomatoes which cost twice as much. Simple greed, so many average Italian families learned to make great sauce with less expensive brands, as my Italian grandparents did. My grandma liked Progresso in the old days.

@@AlphaPoe i grew up with 23 aunts and uncles in the 40s. Every uncle worked 2 jobs and some 3 jobs. One thing they all believed in was eating the best food. That is how I grew up. It holds true today. I worked 2 jobs for more than 25 years and buy the best food. Italians are the best and work as hard as any nationality on the planet.

My wife doesn’t like onions, or cooked celery. One Sunday, at the fire house, the veggies were bad, the sauce tasted fine to everyone,So I stopped using them. Sometimes I do put in a beef shank,if the store has some, Maybe I’ll do that from now on. Sounds like a good idea. Thanks. Miss cooking with my Mom and Nonna. I I never used a slow cooker. The biggest thing is you need to be home, so you can skim off the oil that comes to the top. I wouldn’t leave it for more than 2 hours.

@@Retiredfirehousecook Yes! Well I started my channel end of Aug. 2022. I had 500 subs by end of November, in 3 months. I believe the reason was I cranked out tons of videos so I could build up an inventory. I started uploading desserts about 3 weeks b4 Thanksgiving and I had over 160 subs in 1 week. It hit the “ algorithms “. It slowed down after that. I was thinking Christmas would be the same, but it wasn’t. I had 1K a few weeks b4 my 1 yr anniversary, and the needed hours as well b4 my anniversary, just in time. My channel has grown steadily, but not like the first 3 mo. I also know a few other YT people who were behind me until this past holiday. They cranked out tons of holiday recipes. One gal went from 200 subs to just under 700 in 2 weeks. She actually was doing a dessert every day, Christmas countdown. I’ve never done that. The other gal really hit the algorithms. She was behind me about 400 subs. She’s ahead of me now about maybe 300-400 subs. Once your channel hits the algorithms, anything can happen. The first gal I told you about had had her channel a few years longer than me, but she didn’t post regularly prior to this past holiday. The other gal cranked out videos, and got hit all at once. She shares other peoples videos regularly in her community page. That could help her as well. I hope this helps. You have to post 3-4 times a week to hit the algorithms, not once a week. You also have to watch and mingle with other YT people which was never intentional, it just happens automatically. There’s no way you will grow without the help of other YT’ers. By commenting on others videos, they will check yours out and comment. That’s the way it works!

Cooking is easy. I could do one every day. It’s the editing, that’s hard for me. Do you do your own? If so, what software do you use. I will start talking to other people that I watch. I want to build a kitchen down in my basement, but I promised my wife that I wouldn’t do it until I get sponsor’s.

@@Retiredfirehousecook I do everything on my iPhone, it’s super easy. I use iMovie on my phone to put my video together. All editing is done on my phone. Very simple. I film myself on my iPhone set up on a overhead camera ( phone) holder.

Looks really good! Impressive you were able to combine both the tart & the lemon curd in one video. I did 2 videos. One of my lemon curd, & one of the tart itself. Check it out if you like, I did them 7 mo ago. I 100% agree with you, homemade crusts r the best!! I’ve been making homemade pies 🥧 my whole life. Just recently in the last year used a store bought crust for the first time to make a cherry galette. Great tutorial 👍
