Wally a little secret for good “tostones”. Cut them more thin, frie them slighly once, take them from pan an put one by one in a small recipient with water and salt. Soak for a few seconds and them frie them again completely. You sill like the taste and will not be dry😅

Melt butter with lots of garlic slow heat add cilantro toss tostones in garlic butter season with adobo with mayo catsup. Can't go wrong! Never eat a dry toston!

Yes... oil definitely too hot. Try this... after you smash them dip them in a bath of water and some adobo before you fry them again. Remember to fry in medium-low. You want golden not brown. Also I saw one was starting to turn yellow which starts getting sweet.

You need a tostonera and Pilon. 😂. They sell good ones when you take 10 from Adjuntas to Ponce.

Ok. 2 thing to up your "tostones" game. 1. After frying smash 1 or 2 garlic cloves and drizzle with evoo on garlic paste. Drizzle your tostones with Adobo and add the garlic and evoo paste on the tostones. 2. Do it puertorrican chinese restaurant style. In a sauce pan in low heat melt halve a stick of butter add as much garlic smashed as you want add some Adobo or whatever seasoning you like I use Larry's seasoning salt on this one. Pour that garlicky butter all over your tostones and toss. Heck, you can throw your tostones in the sause pan after combining all ingredients. I add a little cilantro at the end and combine mayo and catsup. You can add to your mayo catsup some Sriracha if you want enjoy!

Don't try to brown them chunked, cook'em a lil over medium heat until you see the texture /color begin to change then after you remove them increase heat of the oil while you get to smashin, finally return to hotter oil for final crisp-up and that perfect golden color.
