Black is to represent when the series generated by the equation (for the Mandelbrot set, it is z^2 + C with C being a constant) remains bounded and does not go to infinity. That means, when the Mandelbrot set is on a number line, the values of C that are colored black lead to the series remaining bounded. The rest of the set is colored by how fast it goes to infinity. This video seems to have a repeating color set, like when they run out of one color they start over, so with that I'm not exactly sure which color means what. But the distinctions between the colors are distinctions of how fast the series goes to infinity.
