Nice to see you working on your tequila cocktails and choosing ones that aren’t just Margaritas - well done! I’m certain Charles H. Baker would be proud (he was not a professional bartender BTW, just someone who loved cocktails, was well-traveled, and wanted to share his discoveries with others) . As someone that has been in the trade for awhile and if you don’t mind a couple quick suggestions to help improve quality - try to limit the amount of salt that is inside the rim of the glass - you don’t want it to falloff and premix into your cocktail. You can do this by adding lime to the external area only (and allowing it to go a little further down the outside - without getting carried away) then tipping the glass sideways and rolling it into the salt. Also, don’t be afraid to use that fine strainer after it’s poured through the Hawthorn with your free hand - removes the bits of lime pulp (this can also be accomplished when you're squeezing your lime but it’s a little harder to do directly into the jigger). I notices someone already commented on the ice. The reason they mentioned staying away from crushed ice is that your cocktail will warm up faster and dilute the flavours leaving the drink watery before it’s finished. Bags of ice purchased from a shop and kept in a deep freezer at home should help with this (the bigger the ice the better). Lastly, don’t be afraid to look around for other ingredients that may improve the flavours of your drinks - such as 100% Agave tequilas - there’s so many in the market these days at all price points. Anyway, I hope the drink was tasty and you’re having fun making them (that’s the most important bit). Cheers!
