Recently purchased this knife. It's a beauty, extremely light-weight and razor-sharp out of the box, a dream of a slicer. But please, "50/50 weight balance" is redundant - You always have balance when 50 % of its weight are either side of an item, that is how a mechanical scale works. Yet, where is the balance point - more towards the blade or towards the handle?

Takedas get even more insanely good when you sharpen them up properly, and knock those shoulders back just a bit. At that point, you basically have to adjust your pressure technique so that you're mostly cutting food and not cutting deep scores into your cutting board. When you sharpen that Takeda treated AS at 5 or 6 degrees per side and then try a pushing type of rock chop, you may find you are cutting a lot of wood.

Depends largely on the acidity of the product you’re cutting. I have a fairly similar knife, and if I’m cutting a lot of onions or something similar I’ll just rinse the blade under running water every 5 minutes or so for a couple of seconds.

I had a very similar knife to this along with 6-7 other super high end knives (takemura suminagashi, saji, etc.), left them in a taxi by accident, was really tired after a long week, crashed my motorbike on the way to work that morning, walked the rest of the way and took a taxi home 16 hours later. Called the taxi company and they asked me who the driver was and the license plate of the car, didn't know either, they didn't give a fuck, cops didn't care. Uber wasn't a thing back then, would have saved me 2-3 grand worth of loss. Since then, never bought another knife, if I ever see a knife like that again, I will buy without hesitation, nothing cuts better than proper honyaki.

I watched this video maybe 50 times over 4 months, I finally bought a Konosuke Fujiyama FM 270mm last night, the new spec is 58mm height, same 262mm length and fit and finish goodness. I just wanted to thank you for posting some of the best videos I've ever seen, and everyone on KKF and CKTG(forums) and Reddit still talks about you, and how you used to make all these amazing knife videos. I'm up to 3 and counting... Next is prob a gyto in this size. Love a tall & light blade, it feels great when powering through a ton of prep. My 180mm funayuki is an F1 car compared to all other blades I've used.
