I'm sure it's tasty with all that garlic, but I would not call this Mexican rice. First, we don't use olive oil. The flavor profile is not neutral enough. Try avocado oil instead. We also include some chopped onion and saute it with the garlic. Everything else is fine. There is no need to use three pots, just one. Try using a little cumin about 1/4 teaspoon for that amount. That dirty’s a lot of pots just to make rice. Why don’t you cook your oil and garlic and then add your rice, brown it, add your tomato sauce and spices and then add your hot water?
