You can keep the peels in the larger tomatoes if you prefer, it will just make them a tiny bit harder to break down and get all stewy

I am defintely going to make this one! They sell lots of Involtini [braciole] around here, so I might try it with that type/cut of beef. It's great for German rouladen so I hope it translates well to this recipe too!

I've been really enjoying your videos for a long time, but I really think your channel growth would be helped considerably by some more visually energetic thumbnails for the videos. It seems that most of the cooking channels tend to use some kind of overlaid text on the thumbnail image. I don't know if it actually encourages more people to click, or it just encourages the algorithm to show them more, but it seems to be something they all have! Just hoping your stuff gets seen by more people!

Nice job, please just a suggestion as for the birria sauce blend all your ingredients the carrots 🥕 and onion 🌰 as cilantro in the fat you would get better flavor as richness too the taste 😋 not just the fat oil. Thank you for sharing and letting me comment 😊

It's not SF Cioppino without Dungeness crab. Fennel fronds, yes (at the end); fennel bulb, no. Plain old mirepoix with bouquet garni (with fresh bay leaf). Canned tomato puree is the best choice. Don't cook scallops in the cioppino, sear the scallops and add them to the finished dish. Steam mussels and clams separately in wine, then add them to the finished dish. Use the steaming liquid from the mussels and clams as a base for the Cioppino. Add fresh herbs at the end (parsley, thyme, fennel). Check for taste and adjust as necessary. Sourdough, toasted or not, is a must. I recommend fried polenta in the bottom of the bowl. Definitely not how my grandpa, or father used to make cioppino, but it adds a certain Italian emphasis on the dish of my ancestors. Trust me, I'm a chef and an SF native.

Hi! TBH, I didn't have a syringe so I decided to use my saucing spoon, but would definitely recommend purchasing one for this method. It will give you much more even spheres!
