I originally thought everyone saying these burgers were too thin were wrong, but i completely agree now. The lacy smashburger should only have maybe the outermost inch of the patty be super thin and crispy, assuming a total diameter of about 5 inches. So the interior 3/5ths of the burger should be at least twice as thick, and thus able to maintain a juicy interior to combine with the Maillard enhanced crust and crispy edges. This place turns a 3oz ball of meat into a 7-inch wide disc of crunchy meat-dust. lol The west coast has never had a particularly strong reputation for producing classic American foods - burgers, pizza, bbq, etc. This place isn't doing anything to change that.

Did the City Council recently shut this whole thing down after like 300 years of existence? I hear they want to get rid of all these legacy brick and mortar food service operations to pave the way for their relatives in the business of lending and leasing food trucks. The plan is then for their other relatives to step in and buy out the legacy businesses for pennies on the Dollar. They do this all by way of weird ordinances at the city level. Pretty interesting stuff if you ask me. I was told that for a hundred grand, you can get an LA City Council member to introduce and secure passage on any ordinance you want. Some people are reportedly getting ordinances passed that require one neighbor to sell their house to another neighbor for half of assessed value. Not bad. Apparently, on some of these, in addition to the hundred grand, you have to sign an affidavit that you are a confirmed Marxist.
